2024 The Reserve Cabernet Sauvignon 750ml
This wine comes from a single, north facing block of old Cabernet Sauvignon vines that are dry grown (never irrigated), planted on their own roots on red volcanic soil, in the green rolling hills of Baw Baw shire.
The fruit was destemmed & wild fermented on skins for 30 days, encouraging full phenolic expression with gentle extraction. Pressed into one new French oak barrel and one seasoned barrel, and matured on fine lees for 16 months, developing complexity, texture, and depth.
The 2024 Reserve Cabernet Sauvignon opens with bright, intense black and red berries, graphite, liquorice and subtle smoke. A ferrous, mineral core drives the wine, anchoring the palate in an earthy, iron-rich structure that speaks to the vineyard's unique soils. Classic Cabernet notes of cassis, bay leaf, and cigar box unfold in layers, supported by fine tannins and balanced acidity.
French oak brings nuance and weight, adding spice, a touch of dark chocolate, and a subtle thread of liquorice. The finish is long, savoury, and mineral, promising longevity and evolution in bottle. This is poised and powerful but ethereal Cabernet with remarkable finesse.
The idea is to only make this wine in the best, warmer vintages, only in tiny volumes, from the low yielding 1982 north facing planting.
This wine started out as a project about wine economics but as soon as it was bottled I realized that's not the point of this wine. I see now that this wine is about taking the best fruit I've got, some of the best fruit in Gippsland and not compromising. Giving it the time and energy required to make something special. A wine I can open for my children when I'm an old man and talk about a time and a place in my life.
